Try adding sweetened forest berries to heighten this lovely dish.
Cook the beets in plenty of water until tender. This takes about 1 hour. Peel the beets and cut into 12 thin slices using a mandolin. Add a small dollop of Snøfrisk® to each slice and fold to form small flowers. Peel and separate the red onions, and place them in a saucepan with the salt, sugar, vinegar and water.
Cover and simmer until the onions are soft. Allow to cool. Arrange the meat on plates together with the pickled onion, golden beet flowers, flatbread, oil and fresh herbs.
Tip: Sweetened forest berries are a delicious addition.
