A traditional south European dessert, with a Nordic touch.
Soak the gelatine leaves in the milk. Slit vanilla pod and scrape out seeds. Combine cream, sugar, grated lemon zest and vanilla seeds. Bring to a boil and simmer gently for approx. 10 minutes. Strain. Remove the vanilla pod. Heat milk, Snøfrisk® and gelatine leaves gently, without boiling. Combine the milk and cream mixtures and leave to cool. Pour the mixture into glasses and chill in the refrigerator.
Boil sugar, water, finely grated zest and juice of the lemon. Leave to cool. Clean the berries (cutting in half, if desired). Toss them in the sugar solution.
Top the panna cotta with berries right before served.
