Serve with chocolate sauce and home-made almond brittle.
Separate the eggs and whisk the egg whites to a stiff consistency together with the sugar. Whisk the cream. Whisk together the egg yolks, Snøfrisk® and orange zest and fold together gently with the egg whites and cream. Put the ice cream mixture into a mould and freeze for at least 3 hours, or use an ice-cream maker. Put the water, sugar, lemon juice and spice into a saucepan and heat until the sugar has dissolved.
Peel and dice the pears. Add the diced pears to the pan and cook over a low heat until the pears are soft. Cool and serve with the ice cream.
