This is a fantastically tasty yet easy Indian-inspired chicken soup One of our most popular recipes!
- 2 chicken fillets
- 1 apple
- 1 onion
- 2 tbsp butter
- 1 tbsp curry powder
- 1 ml water
- 800 g chopped tinned tomatoes
- 2 vegetable stock cubes
- 300 ml single cream
- 1 tsp sugar
- 0,5 tsp salt
- 125 g Snøfrisk® Original
- 3 tbsp light sour cream
Cold cream cheese (optional)
- 4 tbsp chopped herbs, parsley or coriander
Cut the chicken fillets into chunks. Peel and chop the apple. Finely chop the onion.
Melt butter with the curry powder in a pan. Rapidly brown the chunks of chicken and set aside.
Fry the apple and onion in butter and add the water, tomatoes, stock cube, single cream and sugar. Bring to the boil and leave to simmer for 5-10 minutes. Season with salt and pepper.
To make the cream cheese, mix the Snøfrisk® and sour cream to a smooth consistency Serve the soup topped with the cream cheese, fried chicken and a sprinkle of fresh herbs.
TIP: This soup freezes well. Make double the quantity and you have an easy meal ready and waiting in the freezer. Heat frozen soup in a pan over a medium heat.
